Maple sugar or Indian sugar was actually more popular than Maple syrup until the 1800's as it was easier to store than the liquid syrup.

Made by boiling the syrup even more until it literally explodes into crystals. This sugar is pure unprocessed, lower in calories than Cane sugar and tastes great on just about everything from cereal to ice cream, tea or coffee.
